Golden Chia Pudding with Spiced Apples

After the Golden Latte trend, I bring you the Golden Chia Pudding. A perfect option for a nutritious breakfast without compromising flavour!

But why is everyone so obsessed with turmeric? Evidence suggests that curcumin, a polyphenol in the spice, presents many health benefits! In a ddition to all the previous research, a 2017 review concluded that its anti-inflammatory and antioxidant properties were further enhanced when combined with piperine (found in black pepper) and its benefits can be seen even in low doses in undiagnosed individuals (Hewlings, S. J, et al, 2017)!

Now combine that with chia seeds and coconut oil and you’ll maximize those health benefits by further increase curcuma’s bioavailability! Optimize your chia pudding and try this wintery recipe!

Golden Chia Pudding with Spiced Apples (Serves 2)

Chia base

Ingredients:

  • 1/4 cup chia seeds
  • 1 cup almond milk
  • 2 tsp turmeric powder
  • 1 tsp. coconut oil
  • Sweetener of choice (I enjoy maple syrup)

Method:

  1. In a small saucepan, melt the coconut oil and add turmeric powder, remove from heat.
  2. In a medium bowl, whisk together all the ingredients to avoid chia clusters.
  3. Taste and sweeten to desired flavour.
  4. Allow to firm up while making the spiced apples.

Spiced apples

Ingredients:

  • 1 tsp. coconut oil
  • 2 tsp. ground cinnamon
  • 1/2 tsp. ground cardamom
  • 1/2 tsp. ground coriander
  • pinch of black pepper
  • 2 McIntosh apples, cubed

Method:

  1. In a small saucepan, melt the coconut oil over low heat, add the spices and allow to heat until fragrant (be careful not to burn).
  2. Increase the heat to medium and add the apples. Stir constantly for 3-4 minutes until the apples soften and remove from heat.
  3. Cool.

Split the whole into 2 portions and enjoy!
